Photos stuck on older devices

I am a junior technician. I run into this issue constantly. Customers come in with corrupted software running on out of date devices and wanting a way to save their massive photo libraries without bricking the phone or updating their software. Normally by the time these people come in, their internal memory is under 300mb and as soon as the device is connected to iTunes it is wanting to push a restore. These customers get angry because they haven't updated their software in so long and now the device is running terribly and their photos are basically stuck. what are the options for saving the photos at that point? I accidentally erased someone's entire photo library the other day because of this issue. When we plugged device into iTunes to attempt update to 9 so that her photos would begin syncing to iCloud her phone tripped recovery mode and everything was lost. But even if we had made a backup her pics weren't being included in it -_-
