Classic iPod's keep crashing

I love my iPod's. I have many models, all the way back to the 10GB up through 160GB. When Apple announced they were not making Classic iPods any longer, I snapped up several. Here's my issue and no amount of trying various suggestions seem to work. And it can't be the iPod as it happens on all the different models. I've also restored all the iPods so that isn't a solution so please don't suggest that.

Other notes: The 80GB 5.5 model doesn't suffer nearly as much from the crash but it will still crash. The newer Classic iPods will constantly crash. For example, I'll be playing songs or video and can be playing for hours. All is fine. If I go to change the playlist, it may crash. More than likely it is when I return to listen the next day and scroll to a different playlist for example, that causes a crash. The 40GB white/thicker ipods will not crash though I don't really use them much.

1. I am on iTunes version 10.7 as I like the interface and hated 11 and 12 so I refuse to update. I'll agree that perhaps 10.7 software is the cause of this. I have older versions I could install, but I do not want to go to later version. As these iPods were created with earlier iTunes software (at the time), it should work.

2. The update is the latest for each model, meaning if I "check for update" it always reports back that I'm on the latest version for each respective iPod.

3. As mentioned, all have been restored.

Is there an older "update" I could set it back to that might work? An earlier version of iTunes as I mentioned? If someone can confirm 100% that the newer iTunes version fixes this issue, I would probably suck it up and install (and which version would that be if you're confirming).

I also will mention that I have different space on models. For example, all the problems I'm describing are on newer Classic iPods (7th Gen). I have some nearly tapped out and almost filled up entirely (yet that was never a problem with earlier iPods). Still, I have a couple of the other 7th Gen with plenty of room where they're only half full so it doesn't compute that having it almost maxed out would be causing the issue described.

I have been dealing with this for a long time now so please let me know if you have some thoughts here. I've had good experience using this forum so I'm hopeful someone has the perfect solution(s).
