hd video option

hi i plan to get a iPod classic 7th gen i plan to fill it up with all sorts of pictures but anywho when i format a video to be in the right codec for the iPod the converter gives me an option for 720x480 i was confused by this because the greatest output a iPod can make is 640x480 can someone please clarify this
