iPod classic (7th) doesn't recognize fixed metadata upon sync

I just recently bought an iPod classic, 7th generation. I imported my whole music collection (about 67 GB/6,500 files) into iTunes 12.3.2.35 on a MacBook Pro. The files I was copying over to it were on a hard drive hooked up to a Windows machine.

It went okay for the most part, but about 8% of my collection got put into the Unknown Artist folder. I used "Get Info" and looked at some of those files and found that the original file name had populated the "song name" field only. Naturally that necessitates fixing the metadata so that the song name is in its proper field and the artist name is in the artist name field, etc. I figured it's only about 480 files, it won't be fun, but I'll do it. I figured that when I then synced the iPod to the iTunes library again it should fix all that.

Well, after spending hours cleaning up that file info in iTunes, I let the iPod sync again and guess what... it's all still in the Unknown Artist folder!

What's wrong? Why doesn't it update with the new metadata? Is there a way to fix it through the iTunes software? It seems like iTunes is actually behaving normally and it's the iPod that is not reacting the way it should.

LATE EDIT: I went back and looked at some of the source files that I had copied into iTunes and sure enough, the ones that are being put into the Unknown Artist folder on the iPod were missing the artist name metadata in the original source files. But what I don't get is—shouldn't the iPod be able to pick it up now that I fixed the metadata in iTunes?
