iTunes - Mind of its Own

I have the up-to-date version of iTunes (12.5.1.21) and am on iOS version 10.0.2 iPhone. Not that that matters much as this problem has been going on for so long I have forgotten when it started. Here's a synopsis of the problem:
I have sorted my music into Playlists - having each artist etc in their own separate playlist. This means I have about 200 playlists and over 120,000 tracks on my iTunes. Obviously I don't want all that on my iPhone (and it wouldn't take it anyway) so in Music I tick the playlists that I would like to have on my iPhone. So far, so good.
I then sync the iTunes to iPhone and I'll get the dreaded -54 error message and I look at the list of songs not copied and there are about 120 of them. I re-sync and that number goes down and down and down but never quite disappears.
I go to my iPhone and play one of the Playlists only to find that half the tracks haven't been copied - it says they are there but it skips them. I Googled this and found that by deleting the offending playlist and re-syncing that it should come back! Lo and behold I do this and this time there still isn't a complete playlist BUT some of the tracks I could previously play are being skipped and some I couldn't can now be played!!
I'm no technophobe and call me stupid but if iTunes can sync a track one time why can't it do it the next time - and vice versa?
I have been Googling this for months and tried every solution possible but nothing seems to work.
I have deleted everything and started afresh.
I have done hard resets
I have taken CDs off iTunes and reinstated them
I have removed the music from the iPhone and resynced
Nothing seems to work!!
This is really Last Chance Saloon - Can anybody out there help or at least tell me it isn't just my problem?
