what happens if I restore my iphone from backup and then create new itunes account

What happens if I restore my iphone from backup and then create new iTunes account because I'm considering getting a new phone and I want to keep most of data (music, photos, Safari data, contacts, notes, books etc) but I can't access my iTunes account (the back up isn't encrypted) because it keeps saying my password is wrong, even when I change it and get a confirmation email that it has been changed.
So I was wondering if I restore a iPhone from my backup but then create a new account, would it delete all of my data (apps I can redownload that's fine), would it get rid of all my information in iTunes or would it not affect any of my data in iTunes asides from my account details?
