Headset compatible mixer or audio interface

my friend and I are looking to start our own podcast. We both invested in USB input headsets with mics. We quickly found out Audacity will only record one input at a time. we were looking to find an audio interface that would accept multiple USB inputs. We have now decided to switch to standard 3.5 inputs and are looking for an acceptable audio interface or mixer. We would like to find a mixer or audio interface that can accommodate three or more people, in case we have guests later on. We would also prefer it have a USB output to the computer. We have looked at a few of the Behringer Xenyx models and are not sure if we plug the headsets in if we would get both mic and headphones to work. anyone have a good suggestion of a mixer or audio interface that we could use. Any other suggestions or recommendations would be greatly appreciated. We're trying to keep the budget below $200 that matters.
