Changing categories on an iPod?

My classic iPod shows these categories under MUSIC: Playlists, Artists, Albums, Podcasts, Genres, Composers, Audionooks.



Are these fixed or can I change them? <<How>> do I change them? Via iTunes,I expect, but exactly how?
