Manually adding new tracks/syncing

I'm sure this has been answered, so I apologize for making it a new topic. I've searched the forum for answers, but I'm either missing it, or incorectly performing the necessary steps. Anyway, here's my issue.

Got a 64gb Ipod Touch and have added about 2300 songs to it. I have large cd collection, and generally just copy the entire cd to Itunes(version 11). In some cases, I have decided to leave the song in Itunes, but not copy it to the Ipod. To do this, I have used the manually add feature, and selected the songs to copy. I was doing this in Itunes version 10, but stupidly upgraded to version 11.

I'm now having trouble adding a few songs when I add 1 or 2 new cds to Itunes. The last 2 times, I've done this, I've somehow zapped the songs from my Ipod, then it begins to copied all 2300 songs back to the Ipod.

What setting am I messing up? I want to simply rip the new cd to Itunes, and then move the new tracks to the Ipod, without deleting the current tracks. I thought I could simply drag and drop. Am I messing this up by having something set wrong in the SYNC settings?

Please help. I can't keep killing 1-2 hours to re-sync 2300 songs each time I want to add a few new tracks.:o
